FOG consists of fats, oils and greases from cooking and food waste…

  • Cooking oil/Frying oil
  • Shortening/Lard
  • Butter/Margarine

Restaurants and Food Services

Businesses that make and prepare food are required to participate in JSA’s FOG Program. There is no fee associated with the program. Grease traps/interceptors are required to capture the food oil/grease from dishwashing and cleaning practices so that it doesn’t solidify and clog the public sewer main. Unless otherwise determined by JSA, a minimum 1000- gallon external interceptor is required when utilizing components related to a commercial kitchen. Businesses are required to have their interceptors pumped regularly, recording proof of pumping events on a JSA manifest. At times, JSA may mandate a certain pumping schedule be performed for a specific business. Certain businesses may qualify for a waiver from a 1000-gallon external interceptor, based on information provided by the specific business. Granting of a waiver from a 1000-gallon external interceptor is based solely on the discretion of JSA. Mechanic/Fleet Maintenance/Other Production Separators

Businesses that perform automotive and machine maintenance also have a risk of discharging oil, gas, or grease to the sanitary sewer system through floor drains. These substances are also prohibited discharges and can cause blockages in the sewer main as well as other dangers.

An oil water separator would be required for these type of facilities. There are guidelines that can be followed to help size oil water separators. Contact JSA if you are considering opening this type of facility for more information.

FOG Clogs

When sewer pipes on private property back up, the homeowner is responsible for the cleanup. These costs can be expensive. Homeowners are encouraged to manage their FOG debris to mitigate any potential problem within their service line. Residents and business owners can help control the problem by properly disposing of fat, oil and grease.

Simple steps to keep your plumbing working well:

  • Pour FOG into a sealable container and allow it to cool. Dispose of it in the trash.
  • Scrape food scraps into the trash.
  • Wipe cookware and dishes with a paper towel before washing them to remove FOG.
  • Limit using your garbage disposal. Grinding food up does not eliminate FOG.
  • Place strainers in your sink to catch food. Dispose of the scraps in the trash.

JSA is subject to the Kentucky Open Records Act (KRS 61.870-61.884) and certain requirements with regard to records retention.
